CARROT APPLE KUGEL

Separate eggs. Place whites in a large bowl and beat until stiff. Melt margarine or butter in a large saucepan.

Remove from heat and add 1/2 cup of the almonds, eggyolks, apple and carrot, raisins, matzoh meal, lemon juice and cinnamon. fold egg whites into this mixture. Pour into greased 7 x 11- inch or a 9- inch square pan. Top with remaining 1/4 cup almonds. Bake at 375 degrees F for 40 to 45 minutes or until golden.
