Yield: about 3- 1/2 cups

1. Soak the dates and raisins in boiling water for 10 to 15 minutes. Core the apple, cut it into 2- inch pieces, and place in a 1- quart bowl. In a separate bowl, mix the wine, orange juice and ginger together.

2. Place the drained dates and raisins and the apple in the bowl of the food processor fitted with the metal blade or in a blender. Pulse several times; add the nuts and the wine mixture. Pulse several times until you have a coarse paste. Empty into a bowl, cover well, and refrigerate.

Notes: This consistency of this charoseth is like jam.To make the dates and raisins easier to chop, Ms. Schulman recommends soaking them in boiling water for 10 to 15 minutes and draining them. This charoseth can be made 2 to 3 days before the seder. Cover well and refrigerate.
