MY MOTHER'S KNIEDALACH

Yield: 24 or more servings

In a bowl put matsza meal, margarine and chicken soup powder. Pour over the boiling water; mix till all is well blended. Cool. Add the eggs one after the other, mix well after each egg till well blended.

*At this stage you can keep it in refrigerator for further use.

Boil in a big saucepan in a lot of water. When water boils, add some salt. With a spoon, scoop a portion of the kniedle dough. With wet hand shape a small ball (table tennis ball size). When the kniedels starting to float, boil for a another 10 minutes. Drain in a colander, and keep it warm in putting covered colander on top of a saucepan with boiling water.

*If you want to make rolls for "Pessach:" Omit the margarine, add 1/2 cup oil. Shape small rolls, and bake in preheated 350 degree F oven for 20 minutes or until nice gold in color. OR, you can make small patties and fry them in oil.

Rina's Notes: I have a friend (whom I love) who stated . that the ready made Kniedalach mix is the best. ("Osem", you can find it in any Safe Way). Listen. When some body comes over with such statement, It means, that if you are stupid enough and want to argue, - you are lost, and frustrated. But , If you are clever, you just keep your mouth shut, you don't even have to nod your head -- Change subject, and continue to make.
