OVEN: 350 F
Greased 3- quart Pyrex pan
Soak matzohs in water and drain well. Mix drained matzos with all other ingredients except apricot preserves and egg whites. Fold in egg whites.
Pour half of mixture in pan. Layer apricot preserves in center. Pour in remaining mixture.
Bake 1 hour or until brown.
