CARROT TSIMMES KUGEL

Yield: Serves 10 - 12 as a side dish

Oven temperature 325oF and then raised to 350oF

1. In the workbowl of a food processor, grate the sweet potato, carrot and apple.

2. Combine in a large bowl.

3. Add the sugar, salt, baking soda, cinnamon, and nutmeg.

4. Add the melted margarine, veggie stock or water and apple juice and raisins, if using them.

5. Add the cake meal and mix well.

6. Pour into the prepared baking dish and cover with foil.

7. Bake for 45 minutes in a pre-heated 325oF oven.

8. Raise oven temperature to 350oF, remove cover and bake an additional 15 minutes or until liquid is absorbed.

9. Allow to rest for 10 minutes and cut into squares.

NOTES: For individual kugels use muffin tins. Make a day ahead and reheat.
