SPINACH KUGEL FOR PASSOVER

Yield: 6 servings

Saute onion and mushrooms until golden. Reserve 6 mushroom slices for garnish. Mix together spinach, sauteed vegetables, onion soup mix, mayonnaise, eggs and soup nut crumbs. Turn into greased 8x8 pan. Arrange reserved mushrooms on top. Bake at 350 for 1 hour.

NOTES: * 2 TBS matzo farfel or matza meal may be substituted for soup nuts ** 2 egg whites with 1/4 cup egg substitute can be substituted for whole eggs.
