POTATO KUGEL VI

Yield: 6 servings

1. Preheat the oven to 375 degrees F. Heat the baking dish while preparing the kugel.

2. In a bowl, mix together the potatoes, onions, egg whites, matzah meal, salt, and pepper.

3. Add the oil to the baking dish and heat thoroughly for 1-2 minutes more. Spoon the potato mixture into the dish. It will sizzle. Lightly coat the top of the potato mixture with the cooking spray. Bake for 1 hour or until golden brown.
