Yield: 6-8 servings

Break the matzahs into pieces and soak in water until soft. Drain, but don't squeeze. Beat the eggs, salt, sugar, melted shortening, and cinnamon and add to the matzahs. Stir in chopped nuts and chopped apples, then add raisins. Put in an 8" or 9" square baking pan and dot with extra shortening. Bake in 350 degrees F oven 40-45 minutes, until lightly brown.
