Yield: 12 servings
1. Preheat oven to 350 degrees. Spray a 13 x 9 inch baking pan with nonstick cooking spray, set aside.
2. In large bowl, combine potatoes, onion, and eggs. Stir in remaining ingredients and mix well; gently spoon into prepared pan.
3. Bake 35-40 minutes, until browned around edges. Let stand 5 minutes before cutting into 12 equal pieces.
