PESACH SPINACH KUGEL IV
Yield: 8 servings
- 2 packages frozen chopped spinach
- 1 cup soft white cheese, 1/2% fat, or drained yogurt
- 2 cups cottage cheese, lowfat
- 4 eggs, or 6 whites, beaten
- 1 cup matzo meal
- 1 teaspoon salt
- 1/2 teaspoon nutmeg, optional
- 1/8 teaspoon pepper
- 1 1/2 tablespoons lemon juice
Defrost spinach. Add white cheese or yogurt and stir. Add the rest, reserving
1/2 cup matzo meal. Spread in greased 9" x 13" pan. Sprinkle with remaining
matzo meal. Cover and bake 35 minutes at 375 degrees F. Uncover and bake 10 minutes longer.
