PASSOVER VEGETABLE KUGEL

Saute all vegetable in a large skillet over med. hi heat with the butter or margarine; stirring occassioanlly until vegetables are tender but not mushy. Fold in beaten eggs, salt and matzoh meal. spoon into a well greased 9 x 13 baking dish or individual muffin tins( well greased ). Bake 350 for 45 minutes or until firm. cool 10 minutes before cutting into squares. Muffin kugelettes will require less baking time.Note: remove tough stems from spinach before using and rinse spinach leavces very well.
