ESTHER'S MATZO PUDDING
- 12 matzos
- 9 eggs, well beaten
- 1 1/2 tsp. salt
- 1 1/2 cups sugar
- 3/4 cup oil
- 3 tsp cinnamon
- 1 1/2 cups chopped walnuts
- 6 large apples cored, peeled, sliced
- 1 1/2 cups rasins
Break matzos into pieces and soak in water til soft. Drain. Beat eggs with
salt, sugar, oil & cin. Add to drained matzos and stir in nuts, apples, and
rasins. Bake 350 degrees for 50 minutes.
