MATZO BALLS VI
- 1/2 cup of butter or margarine
- 4 eggs lightly beaten
- 1/4 cup chicken stock or water
- 1/4 tsp. salt
- pinch of salt
- 3 tbsp chopped parsley
- 1/4 cup chopped, squeezed spinach
- 1/4 tsp. thyme
- 1/2 tsp. sage
- Pinch tarragon
- 1 cup matzo meal
Mix ingredients.
Cover bowl with plastic and refrigerate for 1 hour.
Form into 1- inch balls and put in pot of soup or water.
Simmer for 1 hour.
