SHIRLEY'S MATZOH DRESSING

Saute vegetables in oil; season with salt and pepper.

Drain matzo; mix in eggs. Mix with sauteed vegetables. Add chicken stock. Grease baking with schmaltz; bake at 325f degrees until brown on top-about 1 hour. If making ahead, don't bake until brown. Reheat slowly and serve hot.

NOTE: my sister adds paprika and poultry seasonings. I have never been able to find k/p poultry seasonings so I do without.
