CHEESE MATZO SOUFFL� WITH DRIED FRUIT (PASSOVER)

Yield: 10 - 12 servings

PREPARATION:

350 degree F oven

1. Wet crushed matzos with hot water and drain.

2. In the bowl of an electric mixer or with a wire whisk, beat eggs.

3. Add milk, cottage cheese, and sour cream and continue beating.

4. Add the juice and rind from the orange and lemon, sugar, and fruit.

5. Fold in the matzos and mix thoroughly.

6. Pour into prepared casserole and bake for 1 hour in a 350o F. oven.

7. Remove from oven and allow to set for a few minutes before cutting.

8. You may make ahead, cool and cut, return to pan and reheat and serve. Freezes well.

OPTION: Omit milk and add 2 - 15 ounce cans of crushed pineapple with juice and 2 teaspoons cinnamon. Use additional cinnamon and sugar for a topping.
