PASSOVER CREAM PUFFS (PAREVE)

NOTE: I have seen an egg substitute (no cholestrol, no fat) that is Pesachdik, in my Kosher butcher- use it by all means.

Boil water and margarine. Add potato flour and stir till the mixture comes away from the sides and forms a ball. Remove from stove. Cool. Add eggs one at a time, beating well after each addition. Dough will be stiff!

Place spoonfuls of batter on greased pan. Bake at 375 degrees F for 30 minutes. When cool, split and fill with desired filling such as pureed jam, fresh fruit, whipped pareve Pesachdik topping, ice cream, etc.
