PASSOVER FRUIT AND NUT BALLS

Yield: 35 to 40 balls

Combine sugar, cinnamon, ginger, honey and water in a saucepan. Cook over medium heat until syrup spins a thread. Remove from heat. Stir in chocolate and peanut oil. When chocolate is melted, add raisins and chopped nuts. Blend in matzah cake meal, a little at a time. Form into balls 1- 1/4 inch in diameter. Roll in sugar. Chill until firm. Store in a closed tin.

You may skip the raisins or the nuts and still have had good results.
