PASSOVER BREAKFAST BANANA PANCAKES

Yield: 10 pancakes

In a medium bowl, whisk eggs. Whisk in mazah meal, cake meal, sour cream, cottage cheese and salt. Stir in banana. Batter will be very thick. Pour oil onto griddle or large skillet. Heat over moderate heat until hot. Make 3 inch pancakes using about 1/4 cup batter for each. Cook until a few bubbles appear on top, and underside is golden, about 3 minutes. Turn and brown on the other side, about 2 minutes. Serve with butter, syrup, jam or anything you like on your pancakes.
