Yield: 4 (double it!)
In a large bowl combine cheese with eggs. Slowly stir in remaining ingredients. Mix well. In large skillet over medium heat, melt a liberal amount of butter or margarine. Fry the pancakes until light brown on both sides. Drain on paper towels. Sprinkle with sugar and cinnamon if desired. Serve hot.
NOTES: This is from Frances AvRutick's "The Complete Passover Cookbook". I made tons of these when my children were little and I couldn't give them cereal over Passover. You can cut them up for the little ones and the toddlers like them as much as cookies.
