LOW FAT POTATO PUDDING

Yield: 12 servings

*NOTE: I put in a white dish towel and wring dry.

1. Preheat ovento 350 degrees F. Spray a 13 x 9- inch baking pan with nonstick cooking spray; set aside.

2. In large bowl, combine potatoes, onion and egg. Stir in remaining ingredients and mix well; gently spoon into prepared pan.

3. Bake 35-40 minutes, until browned around edges. Let stand 5 minutes before cutting into 12 equal pieces.
