POTATO PUDDING

Yield: 8 servings

Peel potatoes. Cut into quarters. Cut onion lengthwise into eighths. Using grater, shred onions and potatoes. Shred carrots. Transfer to colander and sqeeze out as much moisture as possible. Transfer to bowl, mix in eggs, matzo meal, bkg. powder, salt and pepper.

In separate bowl, beat egg whites until stiff. Fold into potato mixture in 2 additions. Brush oil over 13 X 9 pan. Place in 400 degree oven for 5 minutes. Spread mixture evenly in pan and bake for 1 hour.
