Yield: 8 servings

• 6 apples, sliced thin
• 2 tablespoons lemon juice
• 1/3 cup sugar
• 1 teaspoon cinnamon
• 1/8 teaspoon ginger
• 4 cups sponge cake, in small cubes
• 1/2 cup margarine, melted

Mix apples with lemon juice, sugar and spices. Toss cake cubes with margarine. Put 1/3 of cake in greased 8"x12" dish, top with half of apples. Repeat. Top with remaining cubes. Cover and bake 30 minutes at 375F. Uncover and bake 30 minutes more.
