APPLE-CARROT-ALMOND PUDDING

Yield: 4 - 6 servings

Melt margarine in a large pot. Remove from heat. Add 1/2 cup slivered almonds and the egg yolks. Then add all remaining ingredients except egg whites. Beat egg whites till stiff, add to pudding mixture. Turn into a greased 1 quart souffle or baking dish; sprinkle with remaining almonds. Bake at 375 degrees F. for 40 minutes.
