Beat eggs till light. Combine sugar and honey and bring to a boil. Cook ten minutes and remove from heat. Add remaining ingredients to the eggs, mixing well with a fork. Add to syrup. Cook over a low flame, stirring constantly, till brown and very thick (soft crack on a candy thermometer). Turn out on a wet board. Dip hands in ice water and, using the palms, flatten to 1/2 inch thickness. Sprinkle with sugar and ginger and let cool slightly. Cut with a sharp knife into squares or diamonds. Makes about 25.
