FAST MATZOH SHAKSHUKA

Yield: 1 serving

Wet the matzo. Crush with your hands into small pieces; place into a bowl.

Fry the onion with black pepper until golden. Add the tomato and salt and fry for 5 minutes. Add the crushed matzo and mix well. Cook together for 1-1/2 minutes. Add the egg and mix well. Cook for another 2 minutes.

NOTES : you may add some more interesting spices to the tomatoes before adding the matzo: e.g. turmeric, chili etc.
