SPINACH SOUFFLE
Yield: 6 servings
- 2 packages chopped spinach, cooked and drained
- 6 egg whites, or 4 eggs
- 1 potato, cooked and grated
- 1 teaspoon salt
- 2 cups cottage cheese, lowfat
Mix all ingredients. Put into sprayed baking dish. Bake at 350 degrees F for about
1 hour, or until firm.
