PASSOVER SPINACH SOUFFLE II

Yield: 8 servings

Cook and stir onion and garlic in butter until tender.

Beat onion mixture,cream cheese,farmer cheese,salt and pepper with electric mixer on medium speed until well blended. Add eggs one at a time, mixing well after each addition. Blend in spinach.

Pour cheese mixture into a 9- inch square pan. Sprinkle with paprika and nutmeg.

Bake at 325 degrees Fahrenheit for 30 minutes covered with foil.

Uncover and bake 15 minutes more.
