LIGHT VEGETABLE SOUP WITH MATZO BALLS (KP)

Saute onion, scallions, and celery in oil until golden. Add potato, carrots, water, bouillon cubes, tomatoes and cumin. Bring to a boil, reduce heat, cover and simmer for 15 minutes. Add cauliflower and simmer for 10 minutes more. Season to taste. Remove from heat let cool overnight in refrigerator. Right before serving heat over medium high heat. Add peas, dill and chives and simmer for 10 minutes. Serve in individual dishes with matzo balls.
